Simple Corn Relish

Makes: 8 servings

1  cup fresh or thawed frozen corn

¼  cup finely chopped red bell pepper

2  tablespoons chopped chives

1  tablespoon finely chopped shallot

1   tablespoon finely chopped seeded jalapeno

1  tablespoon cider vinegar

1  teaspoon olive oil

1/8  teaspoon salt

1/8  teaspoon pepper

Stir together all of the ingredients; let stand at least 20 minutes before serving.
